外卖餐盒的新考题:海底捞外卖收入增长121.2%,一人食要验证什么?
海底捞集团外卖业务收入半年达20.514亿元,同比增长121.2%、占集团收入9.2%。该收入未按地域拆分,供应商可先准备三组数据。

2026年8月25日,海底捞发布中期业绩。上半年集团总收入223.369亿元,同比增长7.9%;其中,合并集团外卖业务收入20.514亿元,同比增长121.2%,占集团收入9.2%,上年同期占比为4.5%。121.2%只对应外卖业务收入,不是集团总收入涨幅。
报告说明,集团业务主要在中国内地及香港、澳门、台湾地区;期末自营海底捞餐厅包括中国内地1,267家、港澳台23家,另有99家加盟餐厅。外卖收入没有按地域拆分,因此公开口径只写“集团外卖业务”,不增加全球或单一地区限定。
公司披露,增长主要来自两条线:以拌饭外卖为代表的一人食产品销售增长,使外卖从火锅延伸场景走向日常正餐;继续加密自建外卖站,提高覆盖和履约效率,并减轻门店后厨压力。
2025年,集团外卖收入已达26.576亿元,同比增长111.9%,全国布局超过1,200个外卖网点。2026年中报没有更新站点数量,1,200个只能作为历史坐标。
这组数据说明业务结构变了。外卖不再只是把堂食火锅送到家,一人食正在成为独立品类,外卖站也从门店附属环节变成更明确的履约节点。

一人食为什么会把餐盒推到台前
传统火锅外卖往往围绕多人分享,锅底、食材、蘸料和餐具数量较多。一人食更接近日常快餐,主食、汤汁和小料的份量更小,订单频次可能更高,门店留给分装、合盖和核对的时间也更短。
分装增加时,主餐盒、汤盒和酱杯的接口更多,漏装和泄漏风险会上升;组合得到简化时,件数、打包动作和库存压力也可能下降。两种方向都成立,最终要看订单数据。
对供应商而言,餐盒材料只是其中一部分。一份订单所需的全部包装组合,还包括盒盖或封膜、酱杯、封签和外袋。任何一个接口出问题,都可能让整单报损或重送。
食品接触合规是底线,包装还要在真实油、水、温度和配送时间下保持完整。网络餐饮规定要求使用符合食品安全标准的容器和包装材料,完成不可复原封口;平台公开规则也要求防撒漏、防变形、汤固分装和合理堆放。
这些要求没有指定纸、塑料或某一种涂层。能否适用,仍要回到最终餐盒、实际餐品和配送条件。

接下来,只看三组数据
每单包装件数和组合。记录一份订单用了几个容器、哪些盖体能够共用、汤汁和小料是否必须分装。这个数字能回答一人食究竟是在增加包装,还是推动组合简化。
漏损与重送。按订单记录泄漏、变形、封签破损、错装和少件,以及由此产生的报损、赔付和重送。供应商与采购需要关注配送后的结果。
单订单包装总成本。除了餐盒、盖、杯、封签和袋的实际消耗,还要把打包时间、返工、库存尾货、漏损赔付和重送算进去。单只餐盒便宜,并不一定让一份订单更便宜。
这三组数据不变时,增长很可能主要来自菜单、渠道和外卖站密度,现有包装只是随订单放量;数据出现明显变化时,供应链才有理由判断新的容量、组合或结构机会正在形成。
纸基、可回收或可降解等环境声明,还要对应最终产品和真实城市末端;材料名称不能替代食品接触、配送表现或实际回收结果。
包装准备可以提前,结论要等数据
海底捞已经把外卖从火锅延伸业务推向日常正餐,一人食和外卖站成为清晰增长线。包装是否同步调整,公司尚未披露。
餐饮包装供应商和采购无需追着收入增幅推订单,只要把每单组合、配送结果和总成本三组数据做扎实。当品牌开始比较不同方案时,这些数据比一张材料说明更接近采购决定。

A new test for takeaway meal boxes: Haidilao delivery revenuejumps 121.2%. What must single-serving meals validate?
Haidilao Group's delivery business generated RMB 2.0514 billion in revenue in the first half of 2026, up 121.2% year on year and accounting for 9.2% of Group revenue. The figure was not broken down by geography, but suppliers can begin by preparing three sets of data.
The growth in Haidilao Group's delivery business is real; changes to its packaging have not yet been disclosed. For suppliers, the practical value lies in preparing three sets of verifiable data in advance.
The Group's single-serving offerings and delivery stations are extending growth beyond dine-in hot pot into everyday meals. Whether meal boxes need to change depends on the packaging configuration per order, delivery outcomes and total cost.
RMB 2.0514 billion and 121.2% are consolidated Group delivery-business figures. The Group operates mainly in Chinese mainland and the Hong Kong, Macau and Taiwan regions, but the report did not disclose a geographic breakdown of delivery revenue.

RMB 2.0514 billion: Start with the reporting scope
On 25 August 2026, Haidilao announced its interim results. Group revenue for the first half reached RMB 22.3369 billion, up 7.9% year on year. Consolidated delivery-business revenue was RMB 2.0514 billion, up 121.2%, and accounted for 9.2% of Group revenue, compared with 4.5% a year earlier. The 121.2% increase applies only to delivery-business revenue, not total Group revenue.
The report states that the Group operates mainly in Chinese mainland and the Hong Kong, Macau and Taiwan regions. At period end, its self-operated Haidilao restaurants comprised 1,267 in Chinese mainland and 23 in the Hong Kong, Macau and Taiwan regions, in addition to 99 franchised restaurants. Delivery revenue was not broken down by geography, so the public metric should be described only as "Group delivery-business revenue," without adding a global or single-region qualifier.
The Company attributed the growth to two main factors: higher sales of single-serving products, represented by rice-bowl takeaway products, which expanded delivery from an extension of hot pot into an everyday-meal category; and further densification of its self-built delivery-station network, improving coverage and fulfilment efficiency while easing pressure on restaurant kitchen capacity.
In 2025, Group delivery-business revenue reached RMB 2.6576 billion, up 111.9% year on year, and the Company had established more than 1,200 delivery networks nationwide. The 2026 interim report did not update the network count, so 1,200 should be treated only as a historical reference point.
These figures show that the business structure has changed. Delivery is no longer simply dine-in hot pot sent to the home. Single-serving meals are becoming a distinct category, while delivery stations are becoming more clearly defined fulfilment nodes rather than appendages to restaurants.

Why single-serving meals put the meal box front and centre
Traditional hot pot delivery is often designed for sharing, with multiple soup bases, ingredients, dipping sauces and pieces of tableware. Single-serving meals are closer to everyday quick-service food: portions of staples, soups and condiments are smaller, order frequency may be higher, and restaurants have less time for portioning, lid application and order checks.
When more components are portioned separately, there are more interfaces among the main meal box, soup container and sauce cup, increasing the risks of missing items and leakage. When the pack is simplified, the number of components, packing steps and inventory pressure may all decline. Either direction is possible; order-level data must decide.
For suppliers, the meal-box material is only one part of the system. The full packaging configuration for an order also includes lids or lidding film, sauce cups, tamper-evident seals and outer bags. Failure at any interface can cause the entire order to be written off or redelivered.
Food-contact compliance is the baseline, but packaging must also remain intact under actual grease, moisture, temperature and delivery-time conditions. The online catering rules require food containers and packaging materials that comply with food-safety standards and tamper-evident closures that cannot be resealed once opened. Public platform rules also call for spill and deformation prevention, separation of soups from solid foods, and appropriate stacking.
These requirements do not prescribe paper, plastic or any particular coating. Suitability must still be assessed against the finished container, actual food and delivery conditions.

Next, focus on only three sets of data
Packaging components and configuration per order.Record how many containers each order uses, which lids can be shared, and whether soups and condiments must be packed separately. This metric reveals whether single-serving meals increase packaging use or drive configuration simplification.
Leakage, damage and redelivery.At the order level, record leakage, deformation, broken tamper-evident seals, incorrect packing and missing items, together with the resulting write-offs, compensation and redelivery. Suppliers and procurement teams need to focus on post-delivery outcomes.
Total packaging cost per order.In addition to the actual consumption of meal boxes, lids, cups, seals and bags, include packing time, rework, obsolete inventory, compensation for leakage or damage, and redelivery. A cheaper individual meal box does not necessarily make the total order cheaper.
If these three data sets remain unchanged, growth is likely driven mainly by the menu, delivery channels and delivery-station density, with existing packaging simply scaling with order volume. Only when the data change materially does the supply chain have a basis for identifying opportunities in new capacities, configurations or structures.
Environmental claims such as paper-based, recyclable or biodegradable must also correspond to the finished product and actual municipal end-of-life systems. A material label cannot substitute for food-contact compliance, delivery performance or verified recycling outcomes.
Packaging can be prepared in advance; conclusions must wait for the data
Haidilao has expanded delivery from an extension of its hot pot business into everyday meals, with single-serving products and delivery stations emerging as clear growth drivers. The Company has not disclosed whether packaging has changed in parallel.
Foodservice-packaging suppliers and procurement teams do not need to extrapolate orders from the revenue growth rate. They need to establish reliable data on package configuration per order, delivery outcomes and total cost. When the brand begins comparing solutions, these data will be closer to the procurement decision than a material specification sheet alone.
